Easy Ingredient Swaps

Zucchini Pad Thai is flexible enough to accommodate plenty of substitutions.

Vegetables

If yellow squash is not available, use additional zucchini.

You can also add or substitute:

  • Thinly sliced bell peppers
  • Cabbage
  • Bean sprouts
  • Snap peas
  • Mushrooms

Fresh Herbs

Use a mixture of cilantro, basil, and green onions, or emphasize whichever herbs you enjoy most.

Fresh mint can also provide another refreshing flavor.

Protein

For additional protein, try:

  • Cooked shrimp
  • Chicken
  • Tofu
  • Scrambled egg

Cook raw proteins separately until safely done before combining them with the noodles and vegetables.

Vegetarian or Vegan Version

For a vegetarian or vegan version, replace the fish sauce with an appropriate vegetarian or vegan fish-sauce alternative.

Tamari can replace regular soy sauce when preparing a gluten-free variation. Be sure to check every packaged sauce and noodle label to confirm that it meets your dietary requirements.

How to Make Zucchini Pad Thai Step by Step

This Zucchini Pad Thai cooks extremely quickly once the pan gets hot, so prepare and organize all the ingredients before beginning the stir-fry.

1. Soak the Noodles

Place the uncooked Pad Thai noodles in a bowl and cover them with cold water.

Allow them to soak while you prepare the vegetables. They should soften enough to become flexible without turning mushy.

2. Prepare the Vegetable Noodles

Spiralize the zucchini, yellow squash, red bell pepper, onion, and carrots into noodle-like strands.

If your spiralizer does not handle peppers or onions well, simply cut those vegetables into thin strips.

3. Mix the Sauce

Add the fish sauce, brown sugar, vegetable broth, rice vinegar, soy sauce, and chili garlic sauce to a small bowl.

Whisk thoroughly so the brown sugar begins dissolving.

Having the sauce ready is important because the stir-frying stage moves quickly.

4. Quickly Cook the Vegetables

Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.

Add the spiralized vegetables and stir-fry with tongs for about 60 seconds.

Keep the cooking time short so the zucchini remains pleasantly tender instead of becoming watery.

5. Remove the Vegetables

Transfer the lightly cooked vegetables to a separate dish.

Taking them out of the pan prevents the delicate zucchini noodles from overcooking while you finish the rice noodles.

6. Cook the Rice Noodles

Add the remaining 1 tablespoon of vegetable oil to the hot pan.

Drain the softened Pad Thai noodles thoroughly, add them to the pan, and stir-fry for about 1 minute.

Toss continuously with tongs to prevent sticking.

7. Add the Pad Thai Sauce

Pour the prepared sauce over the noodles.

Continue tossing and stir-frying for another 1–2 minutes.

The sauce should begin to thicken and cling to the noodles rather than remaining watery at the bottom of the pan.

8. Bring Everything Together

Return the spiralized vegetables to the pan.

Gently toss until everything is evenly distributed.

Avoid prolonged cooking at this stage because the residual heat will continue softening the zucchini.

9. Finish with Peanuts and Herbs

Remove the Zucchini Pad Thai from the heat.

Fold in the chopped peanuts and generous handfuls of fresh cilantro, green onions, and basil.

10. Serve Immediately

Transfer the noodles to plates or bowls while they are hot.

Serving immediately gives you the best combination of chewy rice noodles, tender-crisp vegetables, crunchy peanuts, and fragrant herbs.

Tips for the Best Zucchini Pad Thai

Avoid Overcooking the Vegetables

The biggest secret to excellent Zucchini Pad Thai is avoiding overcooked vegetables.

Zucchini naturally contains plenty of moisture. If you leave spiralized zucchini over high heat for several minutes, it can release water and dilute the sauce.

A very brief stir-fry is enough. Remove the vegetables after roughly a minute and return them only when the noodles and sauce are nearly finished.

Do Not Oversoak the Rice Noodles

The noodles continue cooking in the hot skillet, so soaking them until completely soft can produce a sticky or mushy finished dish.

Use a Large Pan

Crowding a small skillet traps steam and makes it harder to stir-fry the vegetables effectively.

A large pan allows the ingredients to cook quickly and evenly.

Prepare Everything Before Cooking

Keep your ingredients beside the stove before cooking.

Once the first vegetables hit the hot oil, the remaining Zucchini Pad Thai takes only a few minutes to complete.

Save Some Garnishes

For even more texture, reserve some chopped peanuts and herbs for garnishing individual servings rather than stirring all of them into the pan.
